A gyro is a wonderful Greek creation. The best versions are mixtures of ground beef and lamb that is seasoned with Greek spices, then pressed together and slowly cooked on revolving vertical spits. The spits allow the fat to drain off, and as the meat turns and cooks slowly, it develops a highly prized cooked crust which expert gyro makers slice off with a long knife. Once the slices are ready, they're piled into a warmed pita and topped with onions, tomatoes, and tzatziki sauce.
