We came to Chicago from Bologna, Italy a decade ago with the dream of importing the authentic Italian dining experience. When we say authentic, we mean authentic. We import many of our ingredients and supplies not just from out of state, but from Italy itself. This makes Merlo on Maple some of the most truly authentic Italian food in all of Chicago.

We started the New York Deli News restaurant here in Denver over 20 years ago. We pride ourselves on our great service and especially our delicious New York City inspired meals.
